How does one create a second taxonomy in V. 2?

Using the demo site that comes with Statamic 2.0, how do I add a second taxonomy to the blog. Currently it features "tags". I would like to add "categories".

NOTE:

  1. Changed the routes to include "categories"
  2. In the system.yaml file, I added
auto_taxonomy_fields:
  categories: categories
  tags: tags
  1. Created a folder content\taxonomies\categories

When I go to the Taxonomies in the CP all I see are "Tags". And the category field on the blog post edit page suggests terms from the "tags" taxonomy (this is because there isn't a way to define which taxonomy you want to use via the CP).
