Please explain the Parse::template tag?

I want to write my own plugin that searches through text and replaces some values with some other values (details not relevant).

I've taken a look at a few other plugins that are similar to learn and I see they use the Parse::template call to get the content.

I've seen this:

    $this->content = Parse::template($this->content, Statamic_View::$_dataStore, 'Statamic_View::callback');

Can someone please explain the "right" way to get the content and/or explain that line?
